Our “Maléco” is made by us in our cellars according to the traditional method. With its fine bubbles, its freshness and elegance, it will seduce you at any time of the day and for all your friendly and festive moments, as an aperitif or for dessert!

Geographical location : from our young vines in the Hague Fouassière.
Grape variety : 100% Melon de Bourgogne
Terroir : Micaschists
Vinification : Direct pneumatic pressing of whole bunches. Settling of the must. Temperature control. Alcoholic fermentation for 2 to 3 weeks with indigenous yeasts.
Maturing : 4 months in vats on lees before foaming
Mise en bouteille : By us in our cellars. Bottling for foaming, according to the traditional method. Second ageing in bottle “on slat” for 18 to 24 months before disgorging. Disgorging with expedition liquor (light dosage of 0.1 cl)
Packaging : Sold in cardboard box of 6 bottles, bottle type
Tasting notes : Fresh, floral and fruity nose (redcurrant, pear). Lively, refreshing palate with quince notes, slightly brioche, with a crystal-clear finish.
